My story isn't pretty...
I’m not here to claim how much experience I have and how wonderful it is to cook. I’m here because I have 30 years of failure behind me. Mistakes and memories, I’ve made them all. I could write an entire blog titled “Don’t let this happen to you.” It’s been frustrating, for sure, but I'm still here.
I stayed focused on just one goal: to make healthy meals for my family. Giving up was never an option. With limits on my time, budget and attention span I had to figure out ways to cook that were not complicated or complex in any way.
Things became more challenging as some family members were diagnosed with issues that required diets healthier than what we were accustomed to. Still unwilling to give up, I looked into recipes that were anti-inflammatory, plant based, Mediterranean, and low carb.
Please know this: I AM NOT A NUTRITIONIST OR A DOCTOR. I’m just a mom who, with limited skills and time, figured out some easy recipes that were healthy for my family. That is exactly what you will find here.
I’ve added helpful tips, guides, and printables to help simplify things for you. I’ll continue to search for information that will keep my loved ones on track for a healthier life and I promise to continue posting them here.
