Cook Time: 50 minutes
Servings: 6
Ingredients:
1 pound lean ground beef
4 medium russet or Yukon Gold potatoes, thinly sliced
1 small onion, finely chopped
2 cloves garlic, minced
1 cup frozen or fresh peas (optional)
1 1/2 cups shredded cheddar cheese (or your favorite cheese)
1 cup milk (or unsweetened almond milk for lighter option)
1 tablespoon olive oil
1 tablespoon all-purpose flour (or cornstarch for gluten-free)
1 teaspoon Italian seasoning
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions:
Preheat your oven to 375°F and lightly grease a 9x13-inch casserole dish.
Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess grease.
Stir in the onion and garlic and cook for another 2-3 minutes until fragrant. Add the Italian seasoning, paprika, salt, and pepper. Mix well and remove from heat.
In a small saucepan, whisk the milk and flour (or cornstarch) over medium heat until slightly thickened, about 3-5 minutes. Remove from heat.
Layer half of the sliced potatoes on the bottom of the casserole dish. Top with half of the beef mixture, half of the peas, and 1/2 cup of cheese. Repeat the layers.
Pour the milk mixture evenly over the casserole and sprinkle the remaining cheese on top. Cover tightly with foil.
Bake for 40 minutes covered. Remove the foil and bake for an additional 10 minutes or until the potatoes are tender and the cheese is golden and bubbly.
Let the casserole cool for 5 minutes before serving.
